The Hotel El Mangroove Autograph Collection located in the locality of Papagayo a large body of water off Guanacaste province and the northwestern coast of Costa Rica will host the Sustainable Gastronomic Congress on September 27th and 28th.
This important event will bring together Michelin-starred chefs of great prestige with the culinary director of Enjoy Hotels Randy Siles, well known co-founder of "Autóktono" the famous digital platform which aims to empower cooks ro transform communities through sustainable and healthy gastronomy.
The main objective of this congress is the sharing of knowledge among the participants in order to improve the various practices in the gastronomic sector, all through lectures led by each of the guest chefs.
An essential part of this event is the charity dinner that can be enjoyed for the Fundacion Sonrisas, as well as a dinner prepared by these chefs, each with a special menu, creating a complete experience for everyone.
According to Randy Siles, culinary director of Enjoy Hotels, some of the themes that will be developed in this congress will be zero-kilometer cuisine, waste and maximization of the product, sustainable fishing, food and fair trade, plant-based menus, conservation and enhancement of native products and protection of marine ecosystems.
On the occasion of the charity dinner, a menu of Latin American cuisine will be presented, while for the gala dinner a 10-course menu will be prepared, according to information by Mr. Siles.
The chefs invited to this second edition of the Congress come from different countries such as Spain represented by Kisko García, Benito Gómez, Israel Ramos, Ramsés González, from Japan with Mitsu Taka Kawata and Inés Páez better known as Chef Tita from the Dominican Republic who participated in Top Chef.
This activity focuses on working on sustainability in the gastronomic environment, which is why it is supported by Marca País as an Essential Costa Rica Event.
As an initiative of the Hotel El Mangroove Autograph Collection to encourage the public to live the experience, interested parties can request the special package for two people which includes two nights with breakfast, cocktail, gala dinner, charity dinner and tourist tax.
