Aymavilles | Spectacular Aosta Valley & Smooth Fumin D.O.C.

 

Aymavilles is a very captivating destination, a center of the spectacular Aosta Valley located at the entrance of the picturesque Val di Cogne at 640.0 meters of altitude crossed by the Dora Baltea river and the Grand stream Eyvia, which with their waters provide energy to a hydroelectric power plant developed a few years ago on the municipal territory.

Historically Aymavilles was an ancient Roman settlement preserving remarkable monumental traces linked to that civilization in the spectacular landscape of the Gran Paradiso National Park.

Aymavilles is well known, apart from its significant historical heritage, for being a climatic destination of excellence, loved by various trekking enthusiasts, for its exquisite gastronomy starring the iconic Faveau, a delicious Chickpea Soup and its renowned vineyards included in the "Route des vins", the Wine Route and in this land is produced an excellent Fumin D.O.C., a superlative native red wine which delight the most exigent palates.

It is great to discover the splendid, local attractions, starting from the most prominent monument in the municipal area, the majestic Castle of Aymavilles, an architectural-military masterpiece developed in the Aosta Valley in the Middle Ages.

This fortress was a fief of Aymon di Challant, then of Duke Amedeo VI of Savoy and in 1970 it became a municipal  property.

Erected in 1278 on a quadrangular plan, originally with a single tower and three other imposing cylindrical ones crowned by machicolations added later.

You will immediately notice the difference in size of these defensive structures in terms of height, battlements and diameter, although all of them are equipped with loopholes, machicolations and raised close to the perimeter walls built next to a moat with an entrance that originally had a drawbridge.

Continuation with the Parish Church of Saint Martin built on a wide gorge that ascends to the Cogne Valley, the structure was connected on its right side to a path traced in the Imperial era, reachable via a footbridge that allowed the movement of troops towards the mountainous interior on which an ancient Roman Calzata was later developed.

 Dedicated to the Bishop of Auxerre the Church was erected in the 12th century but largely rebuilt between 1724 and 1725 which boasts a beautiful bell tower and preserves some valuable Romanesque details present in the layout of the splendid façade in which stands out a beautiful contemporary fresco by Nino Pirlato depicting Jesus Christ between Saints Martin and Leodegar

 

 In its interior you can admire a beautiful 19th century altar by the Ticino sculptor brothers Giuseppe and Giacomo Ferrario.

In Aymavilles you can also know the superb Fumin Valle D'Aosta D.O.C. wine, a sublime red created from black grapes of native strain grown in the vineyards of La Tour and Les Crêtes di Aymavilles, with a large polyphenolic set with a start of production in 1995 and rapid, excellent results since then.

The local vineyards are grafted on an area of 2.5 hectares under the Guyot system with typical rows of edges and touch-ups at 650.0 meters above sea level in a moraine, sandy, purely loose soil, with considerable slopes and a North-West-South exposure with manual harvesting that takes place in mid-October.

The elaboration phases and characteristics of this sublime Aosta Valley wine is subject to a fermentation process at temperatures between 28.0 and 30.0 degrees in stainless steel containers and a maceration of 25 days with daily pumping over that precede the aging phase of one year in French oak barrels with a capacity of 300.0 liters and then aged 12 months in the bottle at the production cells.

Its color is a vivid ruby red, with a volaceous edge, a fruity aroma with a smell of blueberry, berries, blackberry, spices, hearts and special vegetal scents.

The Fumin D.O.C. It is intense, warm on the palate, a full, decisive wine with a very soft tannic texture.

This wine has an excellent versatility, in fact it is superlative with red meats such as braised meats, beef stews, roasts, game, excellent to be enjoyed with cured meats, fantastic if combined with cheeses such as Toma, Fontina or others of medium and long maturation and simply perfect with soups.

Time for your lunch, I suggest to try some traditional dish with a choice of first courses between Potato Gnocchi with Fondue or the classic Faveau, second courses between Cotechino in Crust or Coteletta alla Valdostana, both dishes served with a side of potatoes browned with butter and rosemary accompanied by the local Fumin D.O.C.

After your lunch dedicate a short stop in front of the Church of Saint Léger erected in the 1800 which boasts a beautiful façade totally frescoed.

Visiting Aymavilles is a great day of tourism, a destination which offers the chance to enjoy the spectacular alpine landscapes, historic sites and this superb wine of Aosta Valley.
