Cuenca, splendid city in the autonomous community of Castilla – La Mancha in Spain well known for its well – preserved "casa colgadas" or hanging houses cantilevered over the Huécar gorge seemingly cling to cliff's edge with an old centre that preserved its original townscape remarkably intact with many great examples of religious and secular architecture from the 12th to 18th centuries, historic walled town declared a World Heritage site by UNESCO will host from 21st to 22nd october the Congreso Culinaria Castilla – La Mancha, the Culinary Congress of Castilla – La Mancha community.
The event will be held at the José Luis Perales Municipal Auditorium Theater located in Paseo del Huécar, a venue space that it was inaugurated on 6th April 1994 in a ceremony presided over by Her Majesty Queen Sofia.
This event will be the meeting point of the region's gastronomy, the traditional "Cocina Manchega" cuisine known internationally because some of its dishes appear in the famous work Don Quijote de la Mancha written by the iconic Miguel de Cervantes Saavedra and its enough to mention the iconc Pisto Manchego,a vegetable stew with tomato sauce or the emblematic Manchego cheese among others..
The event will offer a forum where knowledge will be shared and will be the ideal place to discover new trends from the hand of great references.
Thus on 21th and 22th October Raiz Culinaria represents the authentic cuisine that defines the identity, spirit and essence of Castilla La - Mancha, a simple, unique, rich regional cuisine and this event will pay a tribute to its tradition and origin.
The local cuisine is different depending on who interprets it, a traditional cuisine linked to historical techniques and methods of preparation that in this Iberian land have continued to be kept alive to this day.
