Ecuador | Gastronomic Triumph at the World Culinary Awards 2024 in Dubai

 


Ecuador, country straddling the equator on northwestern South America'coast shining for its diverse landscape encompasses Andean Highlands, wildlife - rich Galápagos Island, Amazon jungle, a stunning Pacific coastline, a varied biodiversity and a superb historical-cultural heritage with a territory which formed part of the Inca Empire also elevates itself with its gastronomy that shone at the World Culinary Awards 2024 globally recognized to honour culinary establishments and the talented chefs who guide them, an event that was celebrated in Dubai in the United Arab Emirates.

On the occasion of this grand gala of the gastronomic tourism industry at an international level held on October 2nd, Ecuador managed to position itself in a position of excellence on the map of world gastronomy by obtaining its recognition with the participation of the Uniandes Gastronomic Laboratory which excelled with the Zero Lab Fine Dining restaurant.

This restaurant is well known for focusing on the investigation of national products represented the country at the event, highlighting the excellence of its chefs Juan Sebastián Galllardo and Carlos Gallardo who impressed for the brilliant, culinary proposal, earning the prestigious title "Best Restaurant of the Ecuador 2024", a recognition which came thanks to the vote of specialists,  foodies, customers and the general public, thus shining internationally at the highest levels.

The path to this prestigious recognition is due to the result of over 30 years of experience, dedication, meticulous attention to detail and commitment on the part of chef and researcher Carlos Gallardo.

The attention to contemporary haute cuisine of Ecuador has allowed the Zero Lab Fine Dining restaurant into stand out very well not only for the quality of its dishes but also for innovation and commitment to the cultural roots of the country.

This award for best restaurant in Ecuador 2024 elevates the name of the establishment but also that of the country thanks to the vision, imagination and talent in the elite of culinary art.

This recognition was obtained because a member of the international jury visiting Ecuador had the opportunity to try one of Zero Lab's seven starred dishes, a "ceviche" that generally consists of a large plate of marinated meat – fish, seafood or both - on citrus or fruit wings, a unique specialty with red fruits,  Ecuadorian dish made through careful research on the pH in the denaturation of proteins through Ecuadorian fruit.

This Ecuadorian winning dish is made up of the following local ingredients, such as sole fish, blackberry, blueberry, raspberry, tomato oil, quinotto, rice paper and blueberry air.

This award not only recognizes the excellence of Zero Lab Fine Dining but undoubtedly opens up new opportunities for Ecuadorian gastronomy in the international sphere.

The vision of chefs Juan Sebastián Galllardo and Carlos Gallardo is based on culinary research, service excellence, and the creation of menus that integrate local endemic products with a deep cultural history, certainly a model that will become more and more trendy and that will continue to inspire future generations of chefs.

Recent scientific discoveries combined with the ability to blend innovation with tradition will be a success that will continue to be the basis for the growth, consolidation and success of Ecuadorian cuisine in the world.
